[RECIPE] Homemade Lemon Flavour Macaroons

Bonjour ~~
What you will think about if you are in France ??
Paris Eiffel Tower?? Arch of Triumph ?? Crepe??
I'm sure you will think of MACAROONS too!!!

I am sure that many of you love macaroons ~~some people love the cute size  ~~ some people love the sweetness ~~ some people love the colourful look ~~
AND I LOVE IT TOO ~~

As you know , the lovely Macaroons have many flavour ~~ among of all those flavour , I love the lemon flavour so so so much ♥♥♥♥♥ 

Somehow some time we need to face the reality, macaroons is quite expensive to eat , so I was think to made my own MACAROONS !!!wuhoo ~~

Before I start to make my lovely macaroons, I study a lot ~~ I have watched many videos of making macaroons and read many recipes through blog~~
After studying I started to make my 1st batch of Macaroons!!

On my 1st try, I make a huge batch of macaroons, because I had follow a huge portion recipe. In my 1st try , I made 4 different flavour which is lemon, coffee milo, chocolate, and raspberry strawberry. 
Luckily~~ I was successful about  90% (I think~) because I can't make the skirting/'feet' and there is some hole on some pastry, but luckily there is no crack on every pieces on the pastry, and it's still crunchy at the out but chewy in the inner~~ and then the filling part , I think I made a prefect taste for it, especially the lemon flavor ❤❤ o(≧v≦)o~~ (hahaha.... so shy to say this)
Because that was a huge batch and also my 1st try, so I had given some to my friend and aunties, and the feed back I get was "hey, yukie you can open a shop  selling this" ,"Yukie, this is nice ~~i want to book a big 1 for my birthday ~hehehehe" and also from my aunt "Wah Yukie, you so panai (it mean pandai in malay and clever in english) a know to made this ~~ so nice ah" ~~
when I heard those sound it really give me more power to push myself up to make a 100% prefect macaroons ,make me so happy and also give me a lot of confidence.

After my 1st try , my second try was failure (ToT), I still can't made the skirting/'feet'.
But then~~~ da da da da !! I was successful in my 3rd try !!!

I really can't believe that I can made it in just 3 times !!

Alright alright , I have talk too much today, now let's begin to made your own macaroons !!
First of all you have to\ prepare all this tools and ingredient before you start this project !!


Needed Tools
★ Whisk / Electric Mixer / Hand Beater
★ Piping Bag / Zip Plastic Bag
★ Flat Baking Plate/Tray
★ Baking / Parchment Paper
★ Measuring Cups
★ Bowls
★Sieve
(so sorry that I forget to take picture of all this tools)


After geting all this tools ready, you have to get some needed ingredients for the pastry and the fillings ~~


Needed Ingredient (Pastry)(24-30 pieces pastry)
◆ 2 Egg (room temperature)
◆ 1 cup of Icing Sugar/ Powder Sugar
◆3/4 cup of Ground Almond
◆ 2 and half table spoon of Granulated Sugar
◆ 1 or 2 drop of Food Colouring
◆  1 pinch of Salt


Okay !! Finish your preparation ??!!??
Now let's get started !!
First we need 2 room temperature egg, but if you only have in refrigerator?? no worry you can do like this ~~

place the cold egg into the warm water after a few
minutes you will get your room temperature egg !!
*caution the water to be not too warm*
Alright ~~ after you get 2 room temperature egg you can continue to this step ~

separate the egg yolk and the egg white ~
we only need the egg white, the egg yolk you can keep for other cooking purpose
*use hand is more easy and fast*
Done separate the egg yolk with the egg white , we come to 1 of the important part ~
Sieve the Icing Sugar / Powder Sugar and the Ground Almond!!
if you don't do this step you won't get the smooth macaroons surface,and you will get many mini hole on the macaroons surface which can't make your macaroons 100% success!!

be patience while do this , at the end you will get some small almond
that can't sieve, so just keep it to make cookies or throw it.
After done all this sieve ~~ mix it gently !! *do not give pressure*

And put it aside ~ is time to beat the egg !!

put the pinch of salt into the egg white and start beating in medium speed ~~ and then
slowly add in the Granulated Sugar (Continue beating)
Continue beating for 3~4 minutes u should get something like this~~

beat till it become stiff and fluffy enough like this!!
And then , drop in 1 or 2 drop yellow food colour into the egg white and continue beating at high speed for 3~4 minutes~~

Use 1 or 2 drop of the yellow sofe gel paste (food colour)

after adding the yellow food colour continues beating at high speed for 3~4 minutes!
After beating , take out 1/3 premix egg white and mix with the mixture of Icing Sugar/Powder Sugar and Ground Almond, and then continue adding in the rest premix egg white slowly~

use the CUT&FOLD skill to mix this together nicely
*have to mix is gently*
It will a bit hard to mix at the beginning, but u just need to continue the CUT&FOLD skill or keep on mixing it gently, it will slowly became more soft and more thick.

*Be careful this step is the most important step!! You have to be sure that you do not over fold or under fold!! if not you will may get the crack on the pastry!!*

Mix until it take 10~15 second to flow down from the spatula, then it is ready to shape.

*BE CAREFUL DO NOT OVER FOLD OR UNDER FOLD*
Then pour it into a piping bag~~
If you do not have a piping bag , u can use a zip plastic bag ~~ pour it at 1 side of the zip plastic bag, zip it up and then cut out the corner, then you done your DIY piping bag !!

After that , you just need to pipe out the cute circle ~~
Try to pipe out the same sizes of circle , because you need to sandwich together ^o^

I really try hard to pipe out the same sizes!! But it just to hard to control !!
Here a little TIPS for you to made the skirting/'feet' ....
After pipe out the shape on the baking tray , hold 2 side of the tray and then take it up and bang down a few times, then turn the tray around and do the same action on another side too~~when you do this action you will saw the bubble on the surface 'pop' out. This action can help you create a beautiful skirting/'feet' !!

And what you can do is just wait and rest it at the dry place for 30 minutes to 1 hour depends on the humidity. Use a fan to shorten the resting time~~

You have to pay more patience on the step, you have to rest it ,until it form a hard shell. You can test by your finger, it is ready to use if you put your finger on it , it will never stick on your finger~~ and it's mean it ready to get into the oven on 140Âșc for 20 minutes ~~
*IF YOU ARE NOT PATIENT ENOUGH TO WAIT IT REST UNTILL IT DOES NOT STICK ON YOUR FINGER THEN YOU WILL SURE GET THE CRACK ON THE PASTRY AT THE END*


The pastry will be done in 20 minutes ~~
So now let's do the lemon butter filling ~~
1st we need to prepare the needed ingredient~

Needed Ingredient (Filling)
● 150g of Unsalted Butter
● 50g for Icing Sugar/Powder Sugar
● 1 table spoon of Vanilla Flavouring
● 2 table spoon of Thickened Cream/ Double Cream
● 3 tea spoon of Lemon Zest 
● Juice of a whole Lemon


Then place the Unsalted Butter to the bowl and beat it until it soften ~

my butter is ready !!
And then add in the Icing Sugar/Power Sugar through a sieve~

Sieve the Icing Sugar/Powder Sugar and straight add
 into the soften unsalted butter!!
Then continue beating until the sugar mix well with the butter ~
After that add in 1 table spoon Vanilla Flavouring and 2 table spoon Thickened Cream/Double Cream~


1 table spoon of Vanilla Flavour
2 table spoon of Thickened Cream /Double Cream.
Then continue beating , until it mix well ~~
And then , add in the Lemon Zest and the Lemon Juice (the amount of juice can be adjusted according to taste)~~

add all together and mix well!!

TATA!! The filling is done !!

Next you just need to wait for the pastry !!
After cooling the pastry , remove it from the Parchment Paper/Butter Paper gently.
*Wait  until the pastry has cool down, then remove it from the paper so that the bottom will be smooth *

And then what you need to do , is just spread or pipe the filling on the middle of the pastry, and  get another 1 to put on top of it.

just like this ~~

I just spread it on the middle of the pastry (because is homemade)
if you want to use piping bag is also ok~
 This is the final product!!

look I finally get the beautiful skirting/'feet' 
I was really happy to share this experience with you guys~

[SHORT POST] BEFORE RENEW !!

Hey hey !!
Me again~~
I'm going to write a short post today~~
Before this , I was missing for a few week, for who has been following my Instagram, then you will know where I had been~~


I went for a Europe trip for 28 days with my family !!!
So I have no time to renew my blog , but now I already got full rest and full charge of energy ~~ Now I was ready to came back !! I will first update my blog with the homemade macaroons recipe !! can u believe it i was 90% successful during my first try when making it !! and then 100% success in my third try!! WoW such a genius har ?? hahahaha just kidding !! I believe that many people can do better than me ~~

O rite ~~no more blerrrrr ~~ stay tune on my next blog update!! [wink]
